Single fin or 2+1?
The centre fin still leads both setups. Side bites change the amount of hold and the way the board responds when it is pushed through a turn.

A clean single-fin feel
A single fin gives the board one clear pivot and a smooth path through a turn. The feel can change greatly with fin size, base, rake, tip and position in the box.
A pivot fin feels settled and suits deliberate direction changes in a log. A more raked or flexible fin can carry a longer arc and release energy as the board comes out of the turn.
What the side bites add
A 2+1 keeps a larger centre fin and adds two smaller side fins. The side bites give extra grip when the board is put onto a rail, especially when the surfer pushes harder or the wave has more power.
The setup can make an egg or mid-length feel more familiar to someone moving from a thruster. It also gives room to tune the board by changing the centre fin and side-bite size.
Choosing for the board
A classic longboard shaped around trim and noseriding will often make sense as a single fin. An egg expected to cover a wider range of surf may benefit from 2+1 boxes, even when it is ridden as a single fin on some days.
